On Sunday, i cooked macaroni and cheese for dinner! Mac&cheese seems to be some sort of comfort food in America, i think? I love macaroni too! Just a nice warm bowl of macaroni in soup is just lovely (: But i’ve never actually tried mac&cheese before. So i decided to give the recipe a try. As expected, lots of CHEESE, but thankfully it was not too unbearable ;) But if you’re a small eater, try to cut down on the portion…it was quite a lot! :O
Macaroni & Cheese
Serves 6
Ingredients:
400g dried macaroni
85g butter
100g fresh breadcrumbs
4 tbsp plain flour
1 tsp mustard
400ml milk, warmed
175g Cheddar cheese, coarsely grated
100g Mozzarella cheese, drained and finely diced
60g Parmesan cheese, coarsely grated
1. Boil a pot of lightly salted water over high heat. Add the macaroni and boil for 2 minutes less than specified on the packet. Drain well and set aside, shaking off any excess water.
2. Preheat the oven to 200oC and grease an ovenproof serving dish. Melt 25g of butter in a pan. Add the breadcrumbs, stir, then remove the pan from the heat and set aside
(something funny happened while i was doing this - i must have dripped some water on my pan while adding the butter because the entire pan started sputtering and the oil starting jumping out everywhere! I had to dive for shelter :P and all my butter got heated away -.-)
3. Mix the remaining butter, flour, mustard and milk. Whisk them together, then add to a saucepan and bring the mixture to the boil, continuously stirring for 2-3min or until the sauce thickens slightly. Remove from the heat and stir in the cheddar cheese, until melted and smooth, then add the macaroni and mozerella together and stir.
4. Transfer the mixture to the prepared dish and sprinkle the breadcrumbs and parmesan cheese over. Bake the dish for 25min or until heated through and golden brown on top (as you can see, mine was not entirely golden brown :P). Leave to stand for 2min, then serve.
