Chicken Fricassee & Glazed Sweet Potato

argh the photos always turn out looking so weird! haha. but it was a tasty dish okay! :D i have no idea what chicken fricssee is supposed to be though! :P it's a classic one-pot french dish (: cool! :D

Chicken Fricassee

Serves 4
Ingredients:
2 tbsp oil
4 chicken legs, divided into drumstick and thigh joints, skin removed
115g brown mushrooms
4 shallots, sliced
2 garlic cloves, crushed
4 waxy potatoes. peeled and cut into small pieces
150ml dry white wine
300ml chicken stock

1. Heat the oil in a large deep casserole. Fry the chicken pieces over a medium-high heat until golden brown, turning often. Remove from the pan and set aside.
2. Slice the mushrooms. Add the shallots to the pan and fry for 2-3 minutes, stirring often. Add the garlic, mushrooms and potatoes and fry for 2 minutes.
3. Pour in the wine and bring to the boil. Allow to bubble and reduce for 1 minute, then pour in the stock and bring to the boil. Return the chicken to the pan and cover tightly. Reduce the heat and cook gently for 45 minutes or until the chicken is very tender. Serve hot.


Glazed Sweet Potato
Serves 6
Ingredients:
5 orange sweet potatoes
2 tbsp oil
2 tbsp clear honey
1 tbsp light soy sauce

1. Cut the sweet potatoes into large chunks. Boil the chunks in a pot of water for 10 minutes, or until just tender.
2. Mix together the honey and soy sauce, then add the sweet potato chunks. Toss until coated.
3. Fry the honey-coated sweet potatoes lightly in a frying pan, stirring often, for about 2 minutes, or until well coloured.
