Toad in the Hole, Stir-fried Broccoli and Carrots & Potato and eggs

such a funny name this dish has! the photos in my cookbook looked so adorable and i've been wanting to cook this for awhile! mine was looking perfectly like the photo in my book, till i forgot to turn of the oven when warming it, so it got slightly burnt -,- just slightly :P haha.

Toad in the Hole
125g plain flour
pinch of salt
2 eggs
300ml milk
2 tbsp vegetable oil
6 sausages

1. To make the batter, put the flour into a bowl with the sale. Make a well in the centre and add the eggs with a little of the milk. Whisk together, gradually incorporating the flour. Add the remaining milk and whisk to make a smooth batter. Leave to rest for 30min.
2. Preheat the oven to 220 degrees C. Pour the oil into a roasting tin. Add the sausages and toss them in the hot oil. Bake the sausages for 5-10min, or until they are just covered and the fat is very hot.
3. Reduce the oven temperature to 200 degrees C. Carefully pour the batter around the sausages and return to the oven for a further 30min, or until the batter is risen, golden and crisp. Serve immediately.

Stir-fried Broccoli & Carrots
2 tbsp sesame oil
2 tbsp light soy sauce
2 tbsp butter
300g broccoli florets
400g carrots

1. Slice the carrots and cut up the broccoli. Fill a pot with water and boil the vegetables till they are slightly tender.
2. Mix the sesame oil, butter and soy sauce in a bowl.
3. Drain the vegetables and transfer them to a frying pan. Lightly fry for 1min.
4. Add the sauce and stir for another 3-5min until all the vegetables are coated with sauce. Serve.

Potato & eggs
this was hilarious - it was supposed to be a potato omelette, but in the end, i used too many potatoes and added in the leftover sausages from my Toad in the Hole, so i ended up with more potato & sausages than the egg itself, and so my omelette turned out this way :P

5-6 eggs
2 potatoes
garlic, chopped
sausages (optional)
2 tbsp vegetable oil

1. Boil the potatoes for 15min, till slightly soft. Cut them into roughly 5mm slices. Slice the sausages as well, if you're using them.
2. Beat the eggs in a bowl.
3. Fry the garlic in the oil till fragrant. Add in the potato (and sausages) and fry for 2min.
4. Pour in the egg and mix well. When the egg is cooked, your dish is ready! :)
