yay now that it's the holidays i've got time to cook again! :) at least for one day this time. and looking forward to christmas when i can cook again! haha. after a slight disaster in my attempt to bake an apple crumble (boohoo :( ), i was kinda apprehensive about being in the kitchen. haha i guess being an experimental chef sometimes does make things rather unpredictable. so anyway, to be on the safe side i decided to stick with chinese cuisine, which i felt would be hard to bungle up, and i didnt want to touch the oven that soon again, so. :P and phew, it was a success!!!! ^^ i got inspiration from random blogs, so thanks to my fellow food lovers! :)
Soy Sauce Chicken
Ingredients
4 chicken drumsticks
4 hard boiled eggs
Sauce:
1 cup light sauce
4 tbsp sweet dark soy sauce
1/2 cup chinese cooking wine
approximately 2 cups water
3 star anise
ginger, sliced
4 cloves garlic, peeled and smashed
4 tbsp sugar
1. Clean the drumsticks and set aside.
2. In a pot, combine the sauce ingredients (slowly adding the water while tasting to ensure the preferred level of saltiness) together. Cover and simmer on medium-low heat for 15 minutes until it is fragrant.
3. Add in the chicken and let it simmer for 15-20min.
4. Add in the hard boiled eggs and turn of the heat. Cover the lid and let the chicken & eggs soak for 20min.
5. Place on a plate, halve the hard boiled eggs and serve.

Stir-fried Long bean with dried shrimp
Ingredients:
8 long beans (cut to 5cm length)
2 tbsp dried shrimp, soaked
4 cloves garlic, diced
ginger, diced
1 chili padi, sliced
Sauce:
1 tbsp oyster sauce
2 tbsp soy sauce
1/2 cup water
1. Heat oil in a wok, add the ginger and garlic. Fry till fragrant.
2. Add the chili padi and fy, then add the shrimp.
3. Add long beans and stir fry till they are tender.
4. Add the sauce and fry for another 3-5min. Serve.
