Hawaiian Omelette & Brussels Sprouts with Orange

its so fun to make omelettes!!! i should taken photos of my improvements in making them lol! my first omelette was simply too fat to wrap up (greedy me put in too much ingredients :P). the second one was slightly better, but when i tried to fold the egg, it ended up breaking apart. finally, my third omelette was a success!!! :D

heehee so proud of myself xD yeah i know it's not totally wrapped up the way it should be but good enough alr la hor ;) i named it hawaiian omelette cos the ingredients inside are similar to those in a hawaiian pizza! haha :D my favourite pizza in an omelette. yummy! :D

Hawaiian Omelette

Serves 5

15 eggs
3 potatoes, sliced
150g ham, sliced/shredded
1 can of sliced pineapples
5 tbsp wholegrain mustard, extra for dipping
5 slices of cheese

1. Heat a thin layer of oil in a frying pan over a medium-high heat until hot. Reduce heat to medium and add potatoes to the pan in a single layer. Fry for 8-10min or until the bottoms are golden.
2. Turn the potato slices over and fry for 5min or until both sides are golden and tender with tested with the tip of a knife. Set aside.
3. Break the eggs in a bowl and eat them with a fork.
4. Add some oil to the frying pan and spoon the egg into the frying pan until it covers the entire base.
5. Place a slice of cheese in the middle of the egg, and spread one tablespoon of wholegrain mustard over the egg. Scatter 1/5 of the pineapples, potatoes and ham over half of the egg.
6. After 3 minutes, fold the omelette in half and slide it onto a plate.
7. Repeat for four more omelettes. Serve individually on plates with garnishing (optional).

Brussels Sprouts with Orange
Serves 4

450g Brussels sprouts
25g butter
2 garlic cloves
finely grated zest and juice of 1 orange
1 tbsp soya sauce

1. Cut the brussels sprouts into half.
2. Bring a large saucepan of lightly salted water to the boil. Add the sprouts, return the water to the boil and boil for 8min. Drain the sprouts well and set aside.
3. Melt the butter in a large frying pan over a medium high heat. Add the garlic and fry, stirring for 3-5min until golden brown. Add the sprouts and continue to cook, stirring, until tender.
4. Add the soya sauce and continue to mix for 1min.
5. Add the orange zest and juice and stir for 2min or until the liquid is reduced by half. Remove from the heat and serve.
